In a large pot over medium-high heat, add onions and bacon, cook down for five minutes. Add the ham hock and remaining ingredients, except collards. Bring to a boil and add the collards. Bring back to boil, then reduce to a simmer.

  1. Heat olive oil in a medium heavy bottom pot. Add bacon, and cook until crisp. Remove bacon from pot, crumble and set aside.
  2. Add onion to pot and cook until tender, about 5 minutes.
  3. Add garlic, and cook until just fragrant.
  4. Add collard greens, and fry until they start to wilt.
  5. Pour in chicken broth, and season with salt, black pepper, Cajun seasoning, and red pepper flakes. Mix up well.
  6. Reduce heat to low. Add the apple cider vinegar and sugar. Cover pot with lid and simmer for 45 minutes to 1 hour, or until greens are tender.
  7. Once greens are done, add the bacon and mix well to combine. Taste greens for seasoning and salt adjustments
  8. Serve warm and enjoy!

Bring to a boil and add the collards. Bring back to boil, then reduce to a simmer. Heat oil in a large pot over medium-high heat. Add bacon, and cook until crisp. Remove bacon from pan, crumble and return to the pan.
