Today, I am going to be making, Soumen. Somen is very thin wheat flour noodle, eaten on a hot summer day. Japanese summer is hot and high in humidity, so. Sōmen (素麺,そうめん) are white Japanese noodles made of wheat flour and they Somen are usually served cold with a dipping sauce called Tsuyu (つゆ).

The ingredients needed to make 'Somen' & Pork Stir-Fry:
  1. Make ready 90 g x 4 'Somen' Noodles
  2. Get 1 tablespoon Sesame Oil
  3. Prepare 200-300 g Pork *thinly Sliced
  4. Get Salt & White Pepper
  5. Take 1 small piece Ginger * sliced into fine strips
  6. Make ready 1 Onion
  7. Get 4 Eggs
  8. Prepare Canola Oil for cooking
  9. Get 1/2 cup ‘Mentsuyu’ Noodle Dipping Sauce
  10. Get *Note: To make the sauce, mix 1/4 cup Dashi Stock (1/4 cup Water & 1/4 teaspoon Dashi Powder), 1 tablespoon Mirin, 1 tablespoon Sake (Rice Wine), 2 tablespoons Soy Sauce
  11. Get Extra Soy Sauce
  12. Get 3-4 Spring Onion *finely chopped

Steps to make 'Somen' & Pork Stir-Fry:
  1. Slice Pork very thinly and season with Salt and White Pepper. Lightly whisk Eggs in a bowl and season with Salt and White Pepper. Slice Onion and Ginger into thin strips.
  2. Cook ‘Somen’ Noodles as instructed. DO NOT add Salt into the water. Noodles need to be cooked quite firm as you will stir-fry later. After drained, sprinkle Sesame Oil to stop stick together.
  3. Heat 1 tablespoon Canola Oil in a frying pan and cook Eggs to make firm scrambled egg. Transfer to a plate.
  4. Add 1 tablespoon of Canola Oil to the hot frying pan and cook Pork. When the Pork changes colour, add Onion and Ginger and cook until soft. Add 'Mentsuyu' Sauce, then combine with cooked ‘Somen’ and the egg.
  5. Sprinkle extra Soy Sauce over if required, and some chopped Spring Onion and serve.
