  2. When oil is hot put in slices of onion and thin half circle cuts of potato.
  3. Keep moving potatoes and onions around. when potatoes start to get golden brown stir in diced tomato and egg.
  4. Add salt and pepper. Serve with feta cheese, bread, and green onion.

I had some leftover steamed broccoli from the night before & tossed that in when I added the eggs. Great for a quick Sat. am brunch.
