  3. Place on a gridded baking tray in the oven for 10 minutes. Make sure you spread the tenderloins with room for air to circulate around them.
  4. Turn the oven down (to 180oC / 350oF / Gas Mark 4) and continue roasting for 15 minutes.
  5. Remove from oven and carve into slices. Rest for 5 minutes under a foil tent before serving.
