Instructions to make Eggless Christmas cake:
  1. Take 1cup of orange juice in a bowl. Add the dry fruits and nuts. keep it overnight in a refrigerator.
  2. Next day take out from the refrigerator. Bring it to room temperature. Now take a pan, add brown sugar to it, and caramelized it, till it’s dark brown in color. Preheat the oven.
  3. Add a little bit of water to 2-3tbsp of water. Stir and switch off the flame.
  4. Now in a mixing bowl, add this caramelized sugar syrup. Add the soaked fruits to this sugar syrup.
  5. Add cinnamon and nutmeg powder. Mix. Add cocoa powder to it and mix properly. Now add oats powder and wheat flour, baking powder, and baking soda. Give a good mix.
  6. Transfer the mixture to a prepared cake tin. On top put cashews and almonds. Bake it at 180 degree Celsius for 55-60 minutes. Check with a knife. The knife comes out clean, the cake is done.
  7. Take out cake from the oven let it come to a room temperature. Now dust it with powdered sugar. Cake is ready to serve.
