  3. Add ingredients below; reduce heat to a simmer and cover.
  4. In a medium skillet mix oil and cajun seasoning; heat to medium low.
  5. Mix diced chicken into oil and seasoning. Cook until all sides are browned. drain and add chicken to the large skillet. Let simmer 20 minutes or until rice is tender. Let stand 5 minutes and fluff with a fork. Enjoy.
