  1. Mix all above Batter Ingredients and make a thick batter. Make sure No Lumps are left..
  2. Grease thaali with 1tsp oil and and spread the batter over it.. Keep the layer of batter little thick. Heat water in Idli cooker and put this thali into it. Steam it like Idli for 20-25 minutes. After that, insert a toothpick to check if batter is raw or cooked. If batter sticks to it, then it is still not steamed well. Make slices in thali
  3. Heat 2 tsp oil in kadai and add mustard seeds. Saute till they popped. Once they become dark black, add kadi patta, long slices of chilli, pinch of hing and saute well.. add 1 cup of water and 2 tsp sugar.. boil for 3 4 minutes till sugar is dissolved..
  4. Spread this sugar water made in step 3 over Khaman and garnish with chopped Coriander leaves..
  5. Khaman are ready to eat.. Due to Eno, they become spongy and fluffy and ready to absorb the sugar water.
