Prepare For Ghee Phulka:
Take 250 gms wheat flour

Get 1 bay leaf
Make ready 1 tsp shah jeera
Get 1 badi elaichi
Prepare 1 tbsp ghee
Get 1 tsp garam masala powder
Take For Matar paneer:
Prepare 1 cup green peas (boiled)
Get 1 cup cottage cheese (paneer)
Make ready 3-4 onions roughly chopped
Prepare 2 tomatoes roughly chopped
Take 1/2 inch ginger roughly chopped
Get 9-10 garlic cloves (whole)
Get As needed oil
Take 2 tsp kitchen king masala
Prepare 1/2 tsp Kasuri Methi
Take 1/2 tsp Kashmiri Lal Mirch Powder
Get 1/2 tsp turmeric powder
Make ready 1/2 tsp cumin seeds
Get 1/2 tsp dhania jeera powder
Prepare per taste salt As
Prepare 1 tbsp chopped coriander leaves
Take For Aloo Gobhi Matar Sabzi:
Get 2-3 potatoes
Make ready 1 cauliflower chopped
Take 1 cup green peas
Take 2 onions finely chopped
Make ready 1 tbsp ginger garlic green chilli paste
Take 1/2 tsp turmeric powder
Take 1/2 tsp dhania jeera powder
Get 1 tsp kitchen king masala
Make ready As needed Mustard oil
Make ready 1/2 tsp cumin seeds
Prepare As per taste salt
Prepare 1/2 tsp Kasuri Methi
Make ready 1 tbsp chopped coriander leaves
Make ready For Sewaiya kheer:
Prepare 4 cups cow's milk
Take 3/4th cup Roasted Vermicelli
Take 1/4 cup sugar
Get 7-8 chopped cashews
Prepare 1 tbsp ghee
Take 1 tbsp raisins
Prepare 1/4 tsp cardamom powder
Instructions to make Veg Thali:
For Ghee Phulka:
Take Wheat flour in a big bowl add salt and oil now start adding water and knead a soft dough. Rest the dough for 10-15 mins.
After 15 mins knead again and pinch a lemon size portion from dough. Roll it flat in 3-4 inch diameter. Heat a tawa and roast the roti by flipping it on both sides and then directly on the gas flame. The roti must fluff. Apply ghee on the phulkas and they are ready to serve.
For Vegetable Pulav
Wash and soak Pulav Basmati Rice for 20 mins. Meanwhile chop all the veggies - potatoes, cauliflower, carrots, onions and French beans.
Now heat ghee in a pressure cooker add bay leaf, cumin seeds, cloves, whole black pepper, dalchini, green cardamom and black cardamom. Saute for 2 mins and add sliced onions and green chillies. Saute onions well till they are pink.
Now add all the chopped veggies and saute well. Add salt, garam masala powder and soaked basmati rice mix everything well.
Now add 2 cups of water and close the lid. Take one whistle and switch off the flame.
Vegetable pulav is ready to serve.
Matar Paneer:
Soak 18-20 cashews in a small katori filled with water
Boil one cup of green peas and keep aside. Meanwhile heat oil in a kadhai and add roughly chopped- onions, garlic cloves, ginger and tomatoes. Cover and cook till tomatoes are soft and mushy.
Cool down this mixture completely and grind it to make a fine paste.
Heat oil in a kadai add cumin seeds, Kashmiri Lal Mirch Powder, turmeric powder, dhaniya jeera powder, now add grinder masala paste. Saute well till oil separates completely.
Now make cashew paste and add it in kadahi. Mix well.
Add kitchen king masala mix well. Now add boiled matar and paneer cubes. Cover and cook for 10 mins.
Adjust water consistency as per taste. Now add chopped coriander leaves and Kasuri Methi.
Switch off the flame. Matar paneer is ready to serve.
For aloo gobhi matar
Firstly, heat Mustard oil in a kadhai add cumin seeds, add ginger garlic green chilli paste and saute, add chopped onions and saute till it turns golden brown in colour.
Now add turmeric powder, dhaniya jeera powder and kitchen king masala. Mix well
Add all the chopped veggies - potatoes, cauliflower and green peas. Saute well cover and cook for 10 mins.
After 10 mins remove the lid add salt. Again cover and cook for 10 mins. Switch off the flame after 10 mins add Kasuri Methi and chopped coriander leaves.
Aloo gobhi matar sabzi is ready to serve.
Kheer Sewaiya
Firstly in a small tadka kalchi heat ghee and add all - kismis and cashews. Once kismis is fluffy switch off the flame and remove cashews and kismis from ghee. Keep aside for later use.
Now use the same ghee heat it again in a pan and add vermicelli and roast for 2 mins.
Now add 4 cups of hot milk. Lower the flame and let it cook till vermicelli is cooked. Vermicelli will start absorbing the milk and kheer will become thick.
Now add sugar and let it dissolve. Cook for another 5 mins. Now add fried cashews and raisins. Also add Cardamom powder. Mix well and switch off the flame.
Sewaiya kheer is ready to serve. It can be refrigerated and tastes yum when served cold.
