Burfi is a popular North Indian sweet recipe which comes in many flavours. But have you ever had Tomato burfi? If not, then allow us to introduce you to these tomato flavored treats that are a. quite an interesting recipe, Tomato burfi is prepared with tomatoes which are cooked with water, sugar, cornflour, ghee and then mixed with Cashewnuts, roasted almonds and cardamom powder. A simple and different burfi with tomato pulp, sugar and maida.

To get started with this recipe, we have to first prepare a few ingredients. You can have tomato burfi using 6 ingredients and 3 steps. Here is how you can achieve it.

The ingredients needed to make Tomato burfi:
  1. Take 3 large ripe Tomatoes
  2. Get 300 gm finely grated fresh Coconut
  3. Take 150 gm fresh mava
  4. Prepare 2 tablespoon Ghee for cooking +1 teaspoon for greasing
  5. Take 6-8 Pistachios/almonds slivered fine
  6. Prepare as needed Edible Silver leaf/Vark

Steps to make Tomato burfi:
  1. Wash and purée the tomatoes well in a blender without adding any water - - Melt ghee in a saucepan and pour in the tomato purée - - Stir for 4-5 minutes on medium heat
  2. Add finely grated coconut and mix well - - Keep stirring until the mix comes together - - Then add the mava after crumbling or mashing it a bit - - Mix well. The mix will be slightly liquidy after adding mava - - Mix and keep stirring till the mixture thickens to halwa/any burfi mix consistency
  3. Take of heat - - Grease a tray or plate with ghee and spread the mixture evenly starting with one corner - - Sprinkle slivered pistachios and vark (optional) - - Let cool and cut into desired shaped pieces
